Happy Cinco de Mayo!
Posted by Danielle on May 6th, 2010 . Filed under: holiday, mexican, party .Okay, so it’s not really a holiday I celebrate, per say, but I do loooove Tex-Mex food. I’m currently home during the day so I figured I’d undertake a fairly ambitious menu, something I don’t normally have the luxury of on a random Wednesday evening. We had friends over to help eat up the abundance of food I was planning on, and I ran with it.
I saw Jaime’s menu over on Jaime Cooks and immediately started to drool. Having no shame, I completely copied it, tweaked it a bit, and thus my Cinco de Mayo Feast was born! I spent all day in the kitchen, worked with ingredients I’ve never tackled before, made verde sauce from scratch, dirtied every dish I own, burned my hand on oil splatter, and made WAY too much food, but oh boy was it good. We were all so stuffed that we didn’t even get to dessert and the amount of leftovers in my fridge is staggering.
I’ve already announced to everyone that we’re having Taco Bell for dinner next year.
Individual recipes will be coming, but in the meantime, here’s the menu and a picture of my plate at dinner this evening.

It all looks delicious. The empanads and enchiladas will freeze well, so don’t feel like you need to O.D. on the Mexican or, heaven forbid, throw any away. That reminds me, I guess I’ll be having an enchilada for lunch again today.

Thanks for the inspiration! I took the leftovers to my sister and her brood and brought home a more manageable amount – a couple of days’ worth of lunches! It was even better the second day, I think.
