Meal Planning

I pulled a muscle in my lower back last Saturday and spent the bulk of the following 5 days in bed, reading and trying desperately to stay still. I finally got in to see my doctor on Friday and am thanking the drug Gods for Skelaxin, the best muscle relaxer on the planet.
So now I’m back and desperately trying to regain control of my home. Cooking and cleaning fell by the wayside in a big way and DH and I have a lot of housework to catch up on. We did a large grocery shopping trip today and bought all the goodies to make the following two weeks’ worth of meals, some of which were in my last meal plan but ended up cast aside in favor of easier stuff for my MIL and DH to whip up. Here’s hoping we get to all of them this time!
Monday: Broiled Tilapia Parmesan with CousCous and Broccoli
Tuesday: Taco Stuffed Shells
Wednesday: Florentine Turkey Meatloaf with Crash Hot Potatoes and corn
Thursday: Leftovers/Fend for Yourself
Friday: Homemade Pizza
Saturday: White Chicken Chili
Sunday: Nachos
Monday: Chicken Penne Florentine
Tuesday: Teriyaki Chicken with Garlic Noodles and Broccoli
Wednesday: Taco Cups with Sweet Corn Cake
Thursday: Leftovers/Fend for Yourself
Friday: Fish Sticks with Mac & Cheese and Green Beans
Saturday: Chicken ‘n’ Dumplings
Sunday: Chicken Tortilla Chip Casserole
Make-Ahead Breakfasts: Breakfast Burritos; Pumpkin Cream Cheese Muffins
Snacks: PW’s Oatmeal Crispies
